Greek Pasta Salad
1 package tortellini
½ red onion, chopped
½ bell pepper (can be any color but I prefer orange or yellow), chopped
1 bunch fresh basil, chopped
1 cup cherry tomatoes cut in half
½ cup kalamata olives, chopped
1 pound chicken breast, cooked seasoned with oregano, garlic, onion, paprika
1 cup feta cheese
Red wine vinegar
Olive oil
Chop all veggies and set in a large bowl. Cook chicken in oregano, garlic, onion, paprika until cooked through, then dice the chicken. Cook tortellini according to package instructions. When draining the tortellini run under cold water for a minute. Add veggies, diced chicken, and feta cheese to a large bowl. Add ¼ cup olive oil (start here and add more if needed), and ¼ cup red wine vinegar. Mix everything together, add a crack of fresh pepper, and enjoy!
