Chicken & Kale Caesar Wrap
1 pound chicken breast or tenders, cooking in blackened seasoning (smoked paprika powder, garlic powder, onion powder, cayenne powder, salt, pepper, oregano powder)
Parmesan cheese
Large tortilla for wrap (I am using a sundried tomato tortilla!)
1 bunch kale, chopped finely
Homemade croutons:
Preheat oven to 375. Take leftover bread, I am using a baguette, and chop into 1 inch cubes. Put in a bowl and add 1 tbsp olive oil, garlic powder, salt, pepper and mix up. Spread onto baking sheet and bake until golden brown and crispy, about 15-20 minutes.
Homemade caesar dressing (makes about 1 ½ cup):
1 cup mayonnaise
1/3 cup olive oil
1/3 cup fresh lemon juice or about 1 lemon juiced
fresh cracked pepper
3-4 cloves garlic
3-4 dashes fish sauce OR 1 can anchovies (or both if you have them!)
1 teaspoon worstecire sauce (sometimes it needs a dash more, just taste first then add more if need)
½ cup parmesan cheese
Blend all ingredients together!
To make wrap:
Lay out large tortilla. Add chopped kale tossed in caesar dressing, blackened chicken, and a sprinkle of parmesan cheese. Wrap burrito style and then cut in half and enjoy! :)
