5 Minute Pancakes
1 ¼ cup Oats
½ cup Greek Yogurt
1/3 cup Milk
1 Egg
1 teaspoon Vanilla
Pinch Salt
Few dashes Cinnamon
2 teaspoons Baking Powder
1 tbsp Maple Syrup
Add all ingredients to blender and blend well. Cook in a pan on medium-low heat with butter.
My favorite way to top these is with a super simple blueberry jam I make!
Add 1 cup frozen blueberries, 2 tbsp chia seeds, and ½ cup water to a pot and bring to a boil. Let simmer about 10-12 minutes, then you are ready to serve!
